"The operation began in Ezzell’s home, assisted by friends who believed in the mission. Among those was customer Peter Poranski, who purchases bagels from him about twice a month. "He’s just a local here, and we try to help out locals," Poranski said. "His breads are phenomenal, and they’re also reasonably priced." The small shop quickly gained a big reputation.  One of his most meaningful moments in the process occurred when he ran into a customer with another person he didn’t know. "She said, ‘Oh, you’re got to meet this guy," Ezzell recalled. "This is my baker."

About Whole grain, naturally-leavened goodness • Most of the whole-wheat flour sold in grocery stores is actually white flour to which the bran, but not the germ, has been added back. Baked goods made from commercial whole-wheat flour tend to be dry, dense and typically have a bitter over-tone. Freshly milled whole-wheat flour usually has a sweeter taste.

Craig Ponsford, founder of Artisan Bakers and former chairman of the Bread Bakers Guild of America, explains: "the tastiest part of the wheat berry is the germ; that’s where all the fat is. When you remove all the fat it doesn’t have all its properties and it doesn’t taste good. With the germ, it’s super-duper tasty. And incredibly more healthful than the flour that’s available at the grocery store. "Most bread available in the grocery stores are unhealthy for you. Many people have concluded that grains in general and bread in particular are bad for you.”

“Made from processed white flour and pushed by commercial yeast (a product of 19th and 20th century food science) modern baking techniques produce loaves in a couple of hours. This is new to our overall diet. Prior to the 19th century almost all breads were naturally leavened, or sourdough breads.”

True sourdough breads take anywhere from 12 to 24 hours on average to fully develop and mature. Sourdough bread is fermented food and that fermentation process improves flavor, texture, shelf-life and nutritional quality. A sourdough culture is made up of multiple strains of naturally occurring yeasts that live in a stable relationship with any number of different varieties of lactic acid bacteria. Together they create an anti-microbial environment where other microorganisms cannot survive. Sourdoughs don’t require refrigeration and stay fresh longer than modern breads. They are also naturally mold-resistant and don’t require the additions of artificial preservatives.
